Today’s recipe: Spicy Pepper Chicken

Ingredients
For masala:
1tbsp black pepper
1tsp cumin seeds
1tsp fennel seeds
For gravy:
2tbsp oil
3 dried red chillies
3 green chillies – slit
1tbsp minced ginger
1tbsp minced garlic
1 large onion – sliced
1tsp turmeric powder
1/2kg chicken – cut to pieces
Salt, to taste
1 sprig curry leaves – for garnish
Method
Crush peppercorns, cumin seeds and fennel seeds with a mortar and pestle into a fine dry powder. Manual grinding gives added flavour. Heat 2tbsp oil in a pan, add dry red chillies, ginger and garlic, and cook on low flame for 2 minutes. Add onion and stir well until it becomes golden brown colour, on medium flame. Add green chillies, turmeric powder, salt and ground masala powder to it and mix well. Add the chicken, mix to coat well and cook under medium flame for 10 to 15 minutes. Finally, add curry leaves and switch off heat. Serve hot.
