Watermelon delights

As the summer begins to pick up, it’s time to gear up from within with cooling stuff that helps one maintain a god level of hydration.  And what better way to do this than to feast on nature’s bountiful fruit – watermelon – which is meant to cool your summers in a way nothing else can.

When you head to the market, make sure to get watermelon to make your lunches and dinners more delightful. In fact, besides being a favourite ingredient in summer salads and smoothies, watermelon can also serve as a wonderful snack (minus any guilt) at any time of the day.

When selecting a watermelon, make sure to get a nice, juicy, sweet, as well as absolutely red one. There’s really nothing worse than an unripe, flavourless watermelon that can ruin not just your recipe but also your mood. Look for a lighter patch on the watermelon, which is the spot where the watermelon rested in the field – called a field spot. If the field spot is white, the fruit will not be fully ripe. If it is yellow, it’s definitely ripe. Grab that one! Also, the melon should feel very heavy, which means there’s a lot of juice inside.

Never bring home a melon with pinkish flesh, it will never be sweet. On the other hand, you might also find another version of watermelon with yellow flesh – it should be golden yellow to be really sweet.

Here are two unique recipes to enjoy watermelon :

 

Grilled watermelon

  1. Ingredients

1 small seedless watermelon 

3tbsp sugar

½tsp kosher salt

½tsp chat powder or red chilli powder

½tsp lime zest

Method

Cut the watermelon into quarters and then into 2cm thick wedges. Sprinkle slices on both sides with sugar, salt, and chat powder/chilli powder. Preheat a grill (gas or charcoal) to 250º. Place the watermelon slices on oiled grates and  grill, uncovered, until grill marks appear on the slices. Remove and garnish with lemon jest or any other desired toppings (chopped parsley/feta cheese).

Watermelon Salad

2 cups watermelon cubes

1 cucumber – sliced

½ cup crumbled goat cheese or feta cheese cubes

1tbsp chopped coriander

2tsp lemon juice

½tsp crushed black pepper

A pinch of salt

Method

Remove seeds (as far as possible) from the watermelon cubes. Slice cucumber and combine with watermelon cubes in a large bowl or salad tray. Top with crumbled goat cheese or feta cheese cubes. Sprinkle crushed black pepper, lemon juice, chopped coriander and salt. Chill for 15 minutes before serving.
